Coming home for any holiday makes me happy. There is nothing I love more than being with my family….well maybe food. Food in my family is a big deal. We plan every single dish weeks before the holiday, and in this case, Easter. We have the main dishes that will be made the day of, and then there are desserts and appetizers that will be prepared the night before so the only thing we need to do the day of the holiday is put it in the oven to be heated up. (Kitchen and oven space is limited in my house, so we try to work around the lack of space by having certain foods done ahead of time).
Every single year, for every single holiday, it is my job to make my world famous Spinach Dip. I remember one year I did not have time to make it, and my mom's side was not happy about it. So I make sure to have it done.
This isn't a fancy dish at all, and at this point I just eyeball everything because I have made the dip so often. Here's the recipe for the Spinach Dip:
1 package of frozen chopped spinach ( I prefer birds eye)
1 can of artichoke hearts (chopped)
1/3 cup of mayonnaise
1/3 sour cream
3 ounces of cream cheese
1/4 shredded mozzarella cheese
1/4 grated parmesan cheese
1 tsp of garlic
salt & pepper
All you need to do is thaw the spinach and squeeze out all the extra moisture and add it to the rest of the ingredients. It is really hard to mess this recipe up, so fool around with the measurements if you want! Once everything is combined I put it in a buttered dish and place in a 400 degree oven and let it warm up, stirring occasionally. My family loves blue corn chips with it, but crackers work just as well.
